Mexican Dark Chocolate Quick Bread

Total: 1 hour, 20 minutes
Serving: 1 slice
Yield: 1 quick bread (6 slices)
Ingredients
1 cup Fiber One™ Original Cereal
1 cup all-purpose flour
½ tablet Mexican chocolate (like Ibarra), finely grated (about 1/3 cup)
2 tablespoons Dutched cocoa powder
1 teaspoon ground cinnamon
¼ teaspoon salt
½ teaspoon baking soda
2 very ripe bananas**
¼ cup butter, melted
¼ cup unsweetened applesauce
1 large egg, lightly beaten
2/3 cup granulated sugar
¼ cup plain Greek yogurt
1 teaspoon vanilla extract
1 ½ tablespoons dark chocolate chips
Optional topping: powdered sugar sprinkle
Directions
Step 1
Preheat oven to 350 degrees F. Butter (or lightly spray with vegetable oil) and dust a loaf pan with flour. Discard any excess flour.
Step 2
Using a food processor or mini food chopper, finely grind Fiber OneTM Original cereal (see note below for details). In a large bowl, add ground cereal, all-purpose flour, grated chocolate, cocoa powder, cinnamon, salt, and baking soda. Using a whisk, mix ingredients until combined. Set aside.
Step 3
In a medium bowl, mash bananas well, then add butter, applesauce, egg, sugar, yogurt and vanilla extract. Mix well until smooth and creamy. (**Note: If using frozen bananas, make sure they are brought up to room temperature, otherwise butter will harden and will extend total baking time up to 15 minutes.)
Step 4
Add butter mixture to flour mixture little by little, folding ingredients together just until combined. Pour batter into prepared loaf pan and smooth out the top. Tap pan sharply on countertop to remove any air bubbles. Top batter with chocolate chips.
Step 5
Bake for 60 minutes, rotating pan halfway through. Bread is done when center is set, the sides of the bread pull away from the pan, and a toothpick inserted in the center comes out clean. Cool pan on a wire rack for about 15 minutes. Run a butter knife around the bread to loosen it from the pan, then carefully lift it and transfer to a board or rack to cool completely. If desired, top with a sprinkle of powdered sugar. Store leftovers in an airtight container in the refrigerator up to 5 days.
Tip:
For best results, finely grind Fiber One™ Original cereal using a food processor or mini food chopper, otherwise add cereal to a thick, sealed plastic or silicone bag and crush with a mallet or rolling pin.
