The school year has begun and everyone in my house is packing snacks and lunch. Once 8am strikes, we’re all out the door and on-the-go! Because back-to-school days mean busy mornings and hungry kids, it’s extra important that I have tasty and nutritious foods both in their lunch bags and ready to eat after school. My Easy Strawberry Almond Butter Crepe Roll-Ups are satisfying, nutritious and made with naturally sweet California Strawberries. With only five simple ingredients, this is a recipe my kids can make on their own or I can make ahead of time and pack up for them.

Why are strawberries the perfect snack for you and your family? Besides the fact that they are delicious (!), a single serving of eight strawberrieshas more vitamin C than a single orange (110% of the recommended Daily Value(1)), which helps keep their immune systems strong. As parents, we know how important this is, especially at the beginning of the school year! Strawberries are also low in calories (50 per cup), a good source of fiber (3 grams per serving), and are naturally low in sugar, making them a food that helps promote heart health and blood sugar management.(2,3)

Here are a few strawberry facts and shopping tips to keep in mind when you find California strawberries at your local grocery store and/or farmer’s market:

  • California strawberries are fully ripe at the time they are picked and do notcontinue to ripen after harvesting. Choose berries with a bright red color and fresh, green caps (aka calyxes).

  • Strawberry size doesn’t determine flavor or quality. Flavor is influenced by growing conditions like weather, stage of ripeness when picked, and variety. 

  • Did you know that every single strawberry you find at your local store or stand is hand-picked? Yes! No machine can do the incredible job that strawberry farm workers do!

Easy Strawberry Almond Butter Crepe Roll Ups

Easy Strawberry Almond Butter Crepe Roll-Up

Makes 1 crepe
Prep time: 5 minutes
Total time: 10 minutes

Ingredients

  • 1, 9-inch store bought crepe (such as Melissa's

  • 1 1/2 tablespoons creamy, natural almond butter 

  • 1/2 cup strawberries, hulled and thinly sliced 

  • Dust with cinnamon and powdered sugar

 Directions

  1. Spread crepe with almond butter and place strawberries on top. (Note: You may want to heat almond butter in the microwave for about 15-20 seconds to make it easier to spread).

  2. Lightly dust with cinnamon and powdered sugar.

  3. Roll up crepes, and cut into three or four even pieces. Dust again with powdered sugar and cinnamon, if desired.

  4. Serve immediately or place inside a sealed container and refrigerate up to two days.
